I would recommend the following book ...
The Materials and Methods of Sculpture by Jack C Rich
Dover Reprint ISBN 0-486-25742-8 SHould be less than $20
I have found this book excellent. It is very practical,
and at the same time totally fascinating.
Published first in 1947 it covers types of stone and the
classical techniques for carving. It also covers
metals, casting, wax, moulding and other materials. He
often goes back to early sources showing how techniques
developed.
