Why not just start with a large enough block? It's easy enough to order
limestone to whatever size you need.
Glue joints will carve differently than stone, you'll get chipping around
the joint and have to spend a lot of time filling and patching. The grain
and color will be different in the different blocks, which, depending on
the finish of the stone, could create an aesthetic distration.
