You are of course correct. A written contract or agreement can make things easier, though. And if the relationship REALLY breaks down, having the whatever in writing will go a long way towards offering some variety of protection. This based on having a (very) few relationships with clients go sour -- the old "learned that the hard way" routine.

A contract consits of an offer, an acceptance, and consideration. Everything I read in your very thoughtful response fits the definition =)
