Subject: why anhydrite?

Dear Carvers, the discussions regarding anhydrite were interesting and
informative. However, as a beginning carver I'm curious about why people
chose certain stones to carve (i.e., that is besides the obvious reasons
like not carving alabaster for outside sculpture). For example, what
advantages does anhydrite have over alabaster or marble, two stones that
were mentioned in the posts. With the many different soft stones to carve
I'm curious why some carvers use wonderstone and some chlorite and others
alabaster. How do chlorite and anhydrite compare? Once we get past the
obvious (shiny vs. dull finish), is this purely an aesthetic choice?
