I recommend "the Cathedral Builders" by Jean Gimpel. it contains a lot
of information.
you might also rummage around at http://www.newyorkcarver.com/, there's a lot
of medieval stone lore available there
Villard de Honnecourt was a thirteenth century architect/artist whose
drawings, architectural studies among them, can be seen at
http://www.newcastle.edu.au/discipline/fine-art/pubs/villard/
Mathias Roriczer was another medieval builder whose drawings are
available from various sources.
