THE CRAFT AND CREATION OF WOOD SCULPTURE by Cecil Carstenson (paperback
by Dover Publications, 1971) was less than $5.00 when I bought it in
1992. Though it is ostensibly about woodcarving, it was one of those
books you read and every other sentence you say to yourself "YES! YES!
YES!" The principles he discusses apply to stonecarving as well as
wood, and it's basic approach makes it so relevant to the beginner - (at
least as far as the way I teach stonecarving).
For newer books, perhaps you have you seen SCULPTURE IN STONE by
Josepmaria Teixido Camí (the sculptor) and Samtamera, Jacinto Chicharro?
(published in 2000 by Barron's Educational Series). It is less
'personal' than Carstenson's and a bit more pricey, but it is also an
excellent reference book on the process of carving stone with plenty of
descriptive photos. Includes sections on indirect, direct, and template
carving, as well as types of stone, sculptor's tools and studio, and a
glossary of stone-working terms. Well illustrated with step-by-step
photos of works in progress, and a brief history of stone sculpture
illustrated from antiquity to the present.
In 1991 there was Milt Liebson's excellent book DIRECT STONE SCULPTURE
(Schiffer Publishing, Ltd.).

Speaking of videos: Is Goldsworthy's RIVERS AND TIDES on video yet?
I've also heard the BBC video about Ian Hamilton Findley is excellent!
(I've not found a source for this one as yet).
