Regarding layout, lettering styles, etc., I could recommend a book by Chris
Pye called 'Lettercarving in Wood - a practical course'. Although it does
not directly pertain to stonecarving, it is a good resource for layout,
raised lettering, incised lettering, and the intricacies of lettering such
as depth, wall angle, spacing, etc., as well as the characteristics of
individual letters. He covers different lettering styles and the effect of
light and shadow on lettering.
Oddly enough, for a woodcarving book this book contains several examples of
carved stone! I suppose successful and effective layout is the result of
good technique, attention to detail and artistic flair, regardless of the
medium.
Hope this contribution is helpful.
