Depends on the contract you work up with your apprentice. I had one (ironworking) for awhile, unpaid, generally consider the experience positive. Some flexibility in scheduling might be a good idea, since your apprentice is still going to need to make a living somehow if you aren't paying him anything.
Only downside to my apprentice experience was that, just as Jeremy was getting to the point where he had the skills to actually help...he moved =/
