John, As a general rule of thumb, impregnators are below the
surface type sealers, and as such do not prevent calcite bases
stones from reacting with acids. That is why a marble
countertop can be sealed until the cows come home, and it will
still etch when many common kitchen products are spilled on it.
That being the case, you "should " be able to proceed in the way
you plan. However, one caveat. Many sealers will react to the
acid themselves, and can leave an undesirable result,
necessitating removing the sealer.(not a fun job). So I suggest
that you test a sample of the stone, sealer and acid prior to
going wild on your sculpture.
