both can be repolished if you have the right tools. Marble is
something you can do without any problem. Granite is best left
to the pro's Marble will etch from contact with any thing
acidic--many common kitchen products that is, but has been used
for many centuries in countries where brand new and pristine is
not as much as an issue as here in the states. Start with a
honed surface and let it age and patina. As for the sealing
question, some stones (both granites and marbles are more porous
than others. Generally speaking, darker stones are less likely
to need sealing than the lighter colored ones. Uba Tuba,
absolute black, black galaxy, blue pearl etc generally do not
need a sealer, and in fact, most will not even accept a sealer,
so the sealer drys on the stone surface and in essence becomes
your counter top. Check out the fourms at stone info or
ntc-stone web sites for more information on this than you ever
wanted to know.
