Patrick, treat the granite splashback like glass. Don't load it or
stress it, particularly sideways. A toggle bolt tightened against
the granite will eventually break it, particularly where the stone
is heated and cooled regularly.

I recommend drilling oversized holes through the granite so the
fixing can pass though the sheet and anchor into the wall structure behind.
I guess if you have no wall studs in the right places, then you may
have to use the toggle bolts, be careful not to overtighten them.

If you're not using the toggle bolts to hold the timber in place,
Araldite will be OK. Clean the surface of the granite with
acetone (nail polish remover) and use masking tape to keep the
adhesive off the finished surface. Trim excess Araldite just
before it hardens. Tint the glue with acrylic paint or similar.

Your local hardware will probably carry drill bits for glass
and ceramic. Use a template to align the drill bit (drill a
hole through a hand-sized piece of 1/2" plywood and hold it
over the location to get the hole started). Don't use the
hammer setting on your drill, and keep the bit lubricated
with a water spray bottle (barber's cat type).
