structures put a pitched surface on face stones (to vastly increase the
suface area) evaperation has to happen.

I've got to ask about this statment. I've never heard this before. My area
of self education has been focused on the cutting and carving of stone and
not being a builder. That being said, I've always assumed that pitching a
slab or block of stone has always been done to quickly and efficiently
provide a stone for a mason to build with. None of the books and articles
I've gathered , or the contracts I've filled for cut stone ever mentioned
evaporation improvment qualities of pitched stone.
Now before all you masons start marching down the internet with sharpened
trowles and buckets of mud to put me into my place, I'm just looking for
more information on the subject.
