How do you polish a marble

Rick, you'd have to find out why the polish has faded otherwise you will have
the same problem all over again. Have you used harsh cleaners on it? Exposed it
to excessive heat?
Apart from that, the polish has probably been produced by automated machinery in
a factory operation, and it's impossible to replicate that while the stone is in
your kitchen.
I have to ask - why use marble in a kitchen? I assume it is the benchtop you are
having trouble with. Marble is not suitable in a kitchen because it is soft and
chemically reactive compared to granite and other more durable materials.
It's easy for me to say, but why not go with the changing surface? I suggest
that you rub it all over (wet) with 220 grade wet & dry paper to make the
surface uniform in appearance, then treat it with a penetrating sealant to
stabilise it chemically.
You will never get it highly polished unless you spend a lot of time with
sandpaper (up to 1200 grade) and water, and even then it will continue to wear.
