How do you polish a marble

Sorry to hear of the misinformation that some "expert" in home depot gave
you.
You may have a salvageable situation though, if you would like a matt
finish. You could sand off the polish , or etch it with a diluted acid. I've
never tried to unfinish a marble floor, but the polish can be removed. You
would be left with a very hard, tough dark gray marble with subtle white
streaks going through it. The care and maintenance would be simple after
that. Just clean and protect with a good indoor acrylic floor wax.
Lets see if the experts have a easy way to remove the polish, without taking
up the floor.
